I have actually done it more than once.Īnd when I was a kid, I would put black olives on all of my fingers and eat them off one by one. And I always wonder, “How can this be?!” I can literally eat a whole can of olives in one sitting. They add some nice texture and a bit of briny flavor. Add a sliced olive to the center (for the pupil), and make some creepy lines along the egg white using food coloring.Īnd let me just tell you, the olives add a lot. Add the yolk mixture (that has been made delicious with mustard, mayo, and salt) back inside the egg white. Just do whatever works best for you.)Īnd then it’s just assembly. (But sadly, I didn’t have an avocado or beet juice on the day I made these, so I settled for food coloring. And you could add beet juice for a purple color. Of course, if you didn’t want to use food dye, you could add an avocado to the yolk mixture and that would naturally make it green. I chose three colors: orange, green, and purple. But I don’t mind food coloring for special occasions, and in my mind, Halloween is one of those occasions. I know some people really don’t like food dye, and for good reason. Sometimes more of the egg white comes off than I want, but it’s okay if it’s not perfect.įor these colorful monster eyeballs, I added some food coloring to the egg yolk mixture. Dump out the hot water and put the eggs in ice water to cool. Then take the pan off the heat and let them sit (with the lid on the pan) for 20 minutes. Cover the eggs with water and bring them to a rolling boil. You will want to put the eggs in a large pan. They are a nice addition to our Halloween spread. They are a bit spooky, yummy, and I can let the kids eat as many as they want with zero guilt. And I really want them to eat some protein before they carb up on their Halloween candy. They do get a lot of junk food on Halloween (and the week leading up to Halloween), so I like to keep it at least semi-healthy.
